Pear - Cranberry Compote
1 Bartlett Pear (peeled and diced)
1/2 cup Cranberries
2 Oranges (zested and juiced)
3 tbsp Granulated Sugar
1. In a saucepan over medium heat, combine the pears, cranberries, orange juice, orange zest, and sugar
2. Simmer until fruit is softened, about 10-15 minutes
Eggnog French Toast
6 slices Challah or Brioche Bread
2 lg Eggs
1/2 tbsp Granulated Sugar
1 pinch Kosher Salt
3/4 cup Eggnog
Powdered Sugar (optional)
Whipped Cream (optional)
1. In a large bowl, whisk together the eggs, sugar, and salt
2. Whisk in the eggnog until well-mixed
3. Soak both sides of each slice of bread in the eggnog mixture
4. Warm a large skillet over medium heat. Melt 1 tbsp of butter in the hot pan
5. Cook each slice of bread until browned on each side
6. Arrange on a plate, top with pear-cranberry compote, whipped cream, and powdered sugar if using
